Coconut Cacao Protein Bites

Ingredients:
  • 1 cup medjool dates*
  • 1 cup raw almonds
  • 1/2 cup unsweetened shredded coconut
  • 2 Tbsp. chia seeds
  • 4 Tbsp. protein powder
  • 2 Tbsp. raw cacao
  • 2 Tbsp. coconut oil room temperature
Method:
  1. In a food processor, add the almonds, coconut, chia seeds, protein powder & raw cacao. Pulse until a fine flour forms.

  2. Add the dates and coconut oil to the food processor. Pulse until a sticky dough forms. 

  3. Using your hands, roll the dough into balls.

  4. Serve & enjoy. Store in an airtight container in the fridge for up to a week. 

Notes:

*Soften dates in a bowl of hot water for 5-10 minutes. Pat them dry with a towel before putting them in the food processor.
